Chocolate Chip Protein Cookies (Gluten Free, Dairy Free)
These chocolate chip protein cookies are gluten free and dairy free, made with pea protein and perfect for a healthy dessert. This low carb protein cookie recipe is so good, you'll never guess it contains protein powder.
Ingredients
- 0.333 cup0.333 cup0.333 cup Organic [*Spectrum Brand, sustainably sourced] Palm Oil Shortening
- 0.333 cup0.333 cup0.333 cup Coconut Sugar, (or monk fruit sweetener)
- 1 whole1 whole1 whole Egg
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 0.5 cup0.5 cup0.5 cup Almond Flour, (55g)
- 0.25 cup0.25 cup0.25 cup Pea Protein Powder (unflavored), (28g)
- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 0.25 tsp0.25 tsp0.25 tsp Salt
- 0.25 cup0.25 cup0.25 cup Dark Chocolate Chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees F.
- In a medium-sized mixing bowl, combine shortening and coconut sugar. Mix well.
- Add in egg and vanilla, mix.
- Add in almond flour, protein powder, baking soda and salt. Mix well.
- Fold chocolate chips into the batter.
- Scoop cookie dough (1 rounded tablespoon per cookie) onto baking sheet. Bake in oven at 350 degrees for 10-12 minutes.
- Remove cookies from oven. Cool on baking sheet for 5 minutes, then transfer to a wire cooling rack.
- Best stored in fridge or freezer.
