These chocolate collagen cookies are completely flourless, with a rich chocolate flavor, crispy exterior and gooey center.  This recipe is paleo, nut free and keto friendly.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. In a medium-sized mixing bowl, combine sunflower seed butter, egg and vanilla.
  3. Add in collagen, coconut sugar, cocoa powder, baking soda and salt. Mix until well combined.
  4. Fold the chocolate chips into the dough*
  5. Scoop the dough onto your lined baking sheet (about 1 Tbsp dough per cookie).
  6. Bake in the oven at 350 degrees for 12-14 minutes.
  7. After baking, remove cookies from the oven. Let them rest on the baking sheet for a few minutes, then transfer them to a wire cooling rack.

Notes

*The dough is quite oily, but don't fret!  It works!  You can dab the cookie dough with a paper towel if you find it necessary.
