Chocolate Peppermint Cookies (Gluten Free)
These delicious cookies are great during the holidays. And perfect for after the holidays when you have leftover peppermint candies lying around. Soft and rich with a hint of peppermint puts them over the top. Enjoy
Ingredients
- .5 cup.5 cup.5 cup Butter, Salted, room temperature

- .25 cup.25 cup.25 cup Maple Sugar, or granulated sugar

- .66 cup.66 cup.66 cup Brown Sugar, packed
- 111 Egg, room temperature
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 1.25 cups1.25 cups1.25 cups Gluten-Free All-Purpose Flour - Primal Palate, or brand of your choice

- .25 cup.25 cup.25 cup Cocoa Powder, unsweetened

- .5 tsp.5 tsp.5 tsp Baking Soda
- .5 tsp.5 tsp.5 tsp Baking Powder

- .25 tsp.25 tsp.25 tsp Salt

- 4 oz4 oz4 oz Semi-Sweet Chocolate Chips

- 555 Candy Canes, 4-5 minis, or 1-2 normal size, crushed

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium bowl add the butter, sugars, and vanilla. Stir to combine and cream.
- Add the cocoa powder, baking soda, baking powder, and salt. Stir to combine.
- Add about 1/2 the flour, stir.
- Add the egg and stir until smooth.
- Add the remaining flour and stir.
- Add the chocolate chips and peppermint bits. Stir to combine.
- Chill in fridge while oven heats up.
- Heat oven to 350 degrees. Line baking sheet with parchment paper.
- Scoop using ice cream scoop, about 8-10 per pan.
- Bake for 8-10 minutes. It is difficult to tell when they are done so gently press center for softness.
- If really soft let cook a minute longer. If only slightly soft they are probably done.
- Let rest on pan for 10 minutes before removing.
Notes
You can add more chocolate chips for more decadence, or even 1/2 tsp of peppermint extract if you want even more peppermint flavor.
