Cinco De Mayo Taco Salad!
I made this paleo taco salad a few months back and it turned out so well, I figured today would be a great day to post the recipe.
Ingredients
Taco Salad
- 1 lb1 lb1 lb Ground Beef, grass-fed
- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Bacon Grease
- 111 Yellow Onion, chopped
- 111 Red Bell Pepper, sliced
- 2-4 cloves2-4 cloves2-4 cloves Garlic, minced
- Coriander Cumin Powder (Dhana Jeera)
- Chipotle Powder
- Spring Mix Salad Greens Lettuce
Guacamole
- 111 Avocado, 1 large or 2 small, pitted and peeled
- .5.5.5 White Onion, finely chopped
- 1 bunch1 bunch1 bunch Cilantro, finely chopped
- 111 Lime, juice of
- Salt and Pepper, to taste
Pico de Gallo
- 444 Roma Tomato, seeded and chopped
- .5.5.5 White Onion, finely chopped
- 1 bunch1 bunch1 bunch Cilantro, chopped, fresh
- 111 Lime, juice of
- Jalapeño, diced
- Salt and Pepper, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
Taco Salad
- Heat oil, lard or bacon fat in large skillet on medium heat.
- Add onion, bell pepper and garlic and sautee until onion is tender and clear.
- While onion and pepper are sauteeing, combine ground beef, cumin and chipotle in a large mixing bowl.
- Add ground beef mixture to skillet and brown.
- Reduce heat to low and simmer another 10-20 min.
- Place salad greens on a plate and put ground beef on top.
- Add pico de gallo and guacamole.
Guacamole
- In a large bowl, spoon out avocado and mash with a fork until desired consistency.
- Add onion, cilantro and lime juice. Season with salt and pepper.
- Store in airtight container with avocado pit to preserve freshness.
Pico De Gallo
- Place all ingredients into food processor or blender and chop coarsely until mixture reaches desired consistency. I usually do about 5-8 pulses and it's good to go.
- Set aside or store in fridge when done.
Notes
If you're not abstaining from alcohol, now would be a great time to pour yourself a tequila and soda water to enjoy with your meal.
