Cinnamon Roll Muffins
Enjoy all your favorite flavors of cinnamon rolls, but with a twist! These gluten-free cinnamon roll muffins are infused with Sip Herbals Faux Joe Cinnamon Roll Tea, adding a warm, spiced depth to every bite. I topped my muffins with quick cream cheese frosting, to really tie the flavors together. These muffins come together in no time and are a cozy treat you’ll love. Provecho amigos!

- 1 cup1 cup1 cup "Cinnamon Roll" Faux Joe Coffee Alternative (Loose Leaf) - Sip Herbals, *brewed strong and cooled, see note below for tea measurements
- 2 cups2 cups2 cups Gluten-Free Perfect Flour Blend - Namaste Foods
- 0.5 cup0.5 cup0.5 cup Brown Sugar, can substitute for coconut sugar
- 0.25 cup0.25 cup0.25 cup Coconut Oil, melted
- 2 whole2 whole2 whole Eggs
- 1 tsp1 tsp1 tsp Baking Powder
- 0.5 tsp0.5 tsp0.5 tsp Redmond Real Salt
- 0.5 tsp0.5 tsp0.5 tsp Ground Cinnamon
Cinnamon Swirl
- 0.333 cup0.333 cup0.333 cup Brown Sugar
- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil
- 1 Tbsp1 Tbsp1 Tbsp Ground Cinnamon
Cream Cheese Icing
- 5 oz5 oz5 oz Full Fat Cream Cheese, room temperature
- 0.5 tsp0.5 tsp0.5 tsp Pure Vanilla Extract
- 2 Tbsp2 Tbsp2 Tbsp "Cinnamon Roll" Faux Joe Coffee Alternative (Loose Leaf) - Sip Herbals, *brewed strong and cooled, see note below for tea measurements

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350°F (175°C) and line a muffin tin with liners or lightly grease.
- Brew your tea: Prepare 1.25 cup of Sip Herbals “Faux Joe” Cinnamon Roll Herbal Tea and let it cool to room temperature.
- Make your cinnamon swirl: Mix the brown sugar, melted coconut oil, and cinnamon in a small bowl and set aside.
- In another large bowl, whisk eggs, coconut oil, and cooled, brewed tea. Mix until well combined.
- In a separate large bowl, whisk flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.
- Gradually add your dry ingredients to your wet, stirring until combined.
- Fill each muffin cup halfway with batter, then add a generous pinch (about 1 tsp) of the cinnamon swirl mixture to each cup. Fill the rest of the cup with more batter.
- Take a toothpick or skewer and swirl the cinnamon mixture into the batter.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Frosting: Mix the sugar, brewed tea, cream cheese, and vanilla until smooth.
- Let the muffins cool for 15 minutes before frosting. Provecho amigos!
Notes
*Please Note: I brewed about 4 tbsp of Faux Joe tea in about 1.25 cups of water for brew reference. I seeped for about 3-5 minutes and chilled for about 10 minutes in the fridge.
