Lemon Feta Chicken Pasta
This bright and herby pasta is JAM-packed with flavor. Made with simple ingredients—most of which you probably already have on hand—it also features the most incredibly moist, tender chicken that melts in your mouth. Tossed with feta, zesty lemon, and perfectly cooked pasta, it’s a refreshing yet comforting dish you’ll want on repeat. Provecho amigos!
Ingredients
OPTIONAL: Chicken Marinade (30min - 24hours)
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 1 whole1 whole1 whole Lemon, juiced and zested
- 1 Tbsp1 Tbsp1 Tbsp Garlic Powder
- 1 tsp1 tsp1 tsp Real Salt - Redmond
- 1 tsp1 tsp1 tsp Black Pepper
Chicken & Pasta
- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- 12 oz12 oz12 oz Sourdough Pasta - Bionaturae, ANY shape or pasta works, I used penne
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Lemon, juiced & zested
- 0.5 cup0.5 cup0.5 cup Feta Cheese, crumbled
- 1 tsp1 tsp1 tsp Parsley, Dried, can substitute for a small bunch of fresh parsley as well
- 1 Tbsp1 Tbsp1 Tbsp Dill, Dried, can substitute for a small bunch of fresh dill as well
- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Real Salt - Redmond, to taste
- 0.5 tsp0.5 tsp0.5 tsp Cumin, Ground
- 1 lb1 lb1 lb Pasture-raised Chicken Breasts - US Wellness Meats, about 2 breasts
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a bowl or ziploc bag, combine yogurt, garlic powder, lemon juice, zest, salt, and pepper. Add chicken and coat well.
- Marinate for at least 30 minutes, or up to 24 hours in the fridge.
- Heat a skillet or grill pan over medium-high heat. Cook chicken 5–7 minutes per side, or until cooked through and golden with crispy edges.
- Let rest 5 minutes, then slice.
- Bring a pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside in a bowl.
- Drizzle in olive oil, lemon juice & zest, dill, and parsley while the pasta is still warm.
- Fold in the feta cheese.
- Season with salt and pepper to taste.
- Serve warm or chilled, alongside the marinated chicken breast.
