do you remember those milk & cereal bars from the early 2000s? because THIS is delivering that nostalgic energy… just all grown up! protein-packed. lower sugar. gluten-free. made with ingredients you can actually feel good about.

it starts with a creamy, dreamy protein-milk situation (yes, cottage cheese is involved - obviously). then we bring that cinnamon toast crunch energy with a trio of my faves: catalina crunch + lovebird + BTR nation for that sweet, crunchy, functional food magic. and to finish? a glossy, further food's vanilla collagen boosted icing.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

protein “milk” layer

  1. to a small bowl, add white chocolate chips & microwave in 15-30 second intervals until melted; set aside to cool.
  2. to a food processor (or using an immersion blender), add remaining protein “milk” layer ingredients & blend until smooth.
  3. once white chocolate chips are cooled, add to food processor & blend.
  4. line a baking sheet with parchment paper, then pour protein “milk” layer inside & evenly coat bottom of the pan.
  5. freeze until ready to add cereal.

  1. preheat oven to 350.
  2. to a sheet pan, add protein cereals & BTR bars.
  3. in a sauce pan over medium heat, melt butter & brown.
  4. stir in remaining protein caramel ingredients & mix until everything is dissolved.
  5. pour caramel mixture over cereal & mix, then bake for 8-10 minutes.
  6. once pan is cool enough, transfer to the freezer for at least 30 minutes.
  7. once bark is cooled & solid, transfer entire piece of bark & place on top of protein “milk” layer.
  8. to make ganache, start by melting white chocolate chips, then mix in collagen peptides, & water until reaches a nice drizzly consistency.
  9. drizzle on top of bark, then place in the freeze for at least 4 hours or until completely solid before breaking into a bark (the longer the better).
  10. store bark in the freezer & enjoy!
