Collagen Infused Passion Fruit & Haupia Jello Shots (Edit recipe)

A very fun “make ahead” kind of party food that’s not only fun but infused with health benefits! I’ve used the Bare Bones Passion Fruit Drink Mix here, so this party favorite has added collagen, such a fun twist! The haupia layer is a nod to “haupia pudding” often served in Hawaii. It’s coconut flavored and pairs so great with the passion fruit flavor of the drink mix. You can make this an official “shot” by subbing in your favorite alcohol where noted. I’m not a mixologist, so let me know how you like that if you try it out.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

passion fruit cubes

  1. Add water, passion fruit drink mix and prickly pear powder (if using) to a small saucepan. Whisk this together and allow the drink mix and prickly pear powder to become fully incorporated. Once that is done, sprinkle the gelatin evenly over the top and allow it to fully bloom and soften. Be patient, this step is critical to ensure you don’t have any “gelatin lumps” in your finished jello. When you’re confident the gelatin has bloomed a bit and softened, place your saucepan over low heat and warm up, stirring occasionally. You do NOT need it to boil, you just want it warm enough that the gelatin becomes clear and incorporated.
  2. Pour into an 8” x 8” baking dish and place in the refrigerator.

  1. Place the small cups (or preferred cup) on a baking tray lined with a dish towel. The towel will keep them from moving around when they need to be placed in the refrigerator. Set aside.
  2. Using the same small saucepan (that has been washed) add the coconut milk and water (or rum if using) and whisk well to combine.
  3. Same as the passion fruit jello, sprinkle the gelatin evenly over the top, allowing time for it to bloom and soften. Once softened, whisk together then add the sugar, salt, and extracts if using. Place over medium heat and once again, warm until all the gelatin and sugar are fully incorporated.
  4. While warm, pour this into the bottom of each serving cub/vessel you’ve got set up. I had 5 oz cups, so I went with 2-3 tbsp in each cup. Once all are filled, slide the baking sheet into the refrigerator.

  1. When it’s time to party, assembling is super easy. Remove both gelatins from the refrigerator. For the passion fruit mini cubes, run a small spatula around the edges of the baking dish to help it release, then carefully remove from the pan onto a cutting board. Slice into ½” strips, then into cubes. I like to place the cubes in another container as I go. Be mindful, these little cubes will “bounce” right onto the floor if you’re not careful!
  2. Place the desired amount of the passion fruit cubes on top of the haupia jello in whatever amount suits you. If you want a very full cup, you may want to double the amount of passion fruit jello you make. This is totally up to you.
  3. To make the passion fruit whipped cream, add the whipping cream, drink mix powder and syrup (if using) to a small mixing bowl. Whip until desired consistency and place a dollop on top of the cubes. Garnish with mint leaves if desired and serve.

Notes

You can prep the cups ahead of time with the jello elements, as they will stay firm at room temperature for a couple hours. Then right before serving add the whipped cream garnish.

I used these 5 oz clear cups and these are the little bamboo spoons also pictured.

If you want really full cups of the cubed passion fruit cubes as pictured, double the recipe for that portion of the recipe and pour into a 9" x 13" baking dish to set up.
