Passion Picnic Mocktails and Fruit Skewers (Edit recipe)

These “drunken” fruit kebabs are marinated in a spicy-sweet mocktail — featuring my hibiscus syrup and the bold heat of Profanity Jams Passion Fruit Habanero blend. This mocktail’s too good to just drink, so I marinated my fruit in it too. Perfect for sipping and skewering. Feel free to sub gin or your favorite liquor for the sparkling water for an actual “drunken” fruit/cocktail vibe. I've added a splash of my Hibiscus Syrup and it lends such a luscious color and another layer of flavor to the pineapple and mocktail!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Prepare the mocktail/marinade by adding the pineapple juice, lime juice, passion fruit jam, hibiscus syrup, honey (if using) and mint to a mason jar and muddle or mix with a few ice cubes to combine well and break apart the mint. Pour in enough sparkling water (or liquor of choice) to get about 2 ½ cups of liquid. Depending on the jar you end up putting the fruit in, you may need more or less.
  2. Add pineapple spears to a large jar that will accommodate the height of the spears as well as a few strawberries (if you choose to marinate them) – totally your call here. The strawberries will be softer after marinating, so that’s why a nice ripe/firm strawberry is best. Tuck a sprig of mint into the fruit as well.
  3. Once the fruit is in the jar, pour the mocktail/marinade over the fruit so it’s covered, then get that lid on and place it in the fridge. Give it at least 4 hours or up to overnight. Any longer and you will want to remove the berries, the pineapple can marinate for days!
  4. When ready to make your skewers, remove the fruit and cut the pineapple into skewer sized pieces and thread those pieces along with the whole strawberries and blueberries, alternating as desired, onto 4” skewers and add to a serving platter. You should get about 6-8 depending on how thick you cut your pineapple or the size of your strawberries.
  5. For the MOCKTAIL, simply add ice to your favorite glass, pour that mocktail right out of the jar over the ice, add a skewer of blueberries and mint, then sip and enjoy!

Notes

If having the strawberries slightly "plump" from being in the marinade for a few hours is off putting in any way, feel free to NOT put them in with the pineapple and put them fresh on the skewers with the marinated pineapple. For the liquor, I'm not an expert, but you probably only need 2 oz per serving, for a total of 4 oz. I'd guess using a combo of sparkling water and liquor would be key. For sure use your best judgement here.
