Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Chop all the vegetables and keep aside.
- In a large mixing bowl or salad bowl, add the honey mustard, lemon juice, extra virgin olive oil and black pepper. Mix using a whisk to get a creamy emulsion.
- Now add all the chopped vegetables to this mixing bowl. Sprinkle with sea salt and cilantro on top of all the vegetables. Then using a wooden spoon gently toss the veggies together to mix with the dressing below. Toss until all the veggies are coated with the dressing. Do not over stir as that will disfigure the avocados and peaches.
- You can even prepare this salad a few hours in advance of your party and keep it in the refrigerator covered with plastic wrap.
