Thick & creamy, high protein, and no refined sugar needed for this refreshing homemade peach shake! I used my favorite clean ingredient protein powder from Just Ingredients and peaches n cream here, and it added the perfect flavor! Vanilla will also work here. Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Blend cottage cheese until smooth
  2. Pour into mini silicone muffin mold and freeze for 2-3 hours until firm
  3. *freezing the cottage cheese allows for this to be a thick blizzard style shake. You can skip this freezing step for more of a drinkable thinner milkshake
  4. Meanwhile, making whipped cream if using:
  5. Chili a mixing bowl, then add all ingredients and use an electric stand or hand mixer to whip until whipped cream texture achieved (~5-7 min)
  6. If using powdered monkfruit versus powdered sugar you'll want to add the arrowroot flour after about 4 minutes to help thicken . Set aside in the fridge
  7. Blend frozen peaches, fresh or frozen cottage cheese, peaches n cream protein powder (vanilla is fine too), and vanilla extract. Add a splash of milk if needed to fully blend, scraping the sides as needed in between
  8. Top with whipped cream (or use store bought, I like Truwhip or coco whip) and garnish with a cherry
  9. Enjoy!

Notes

you will have leftover whipped cream to use another day (store in the fridge in an airtight container). Nutritional facts may not be accurate because of this. Can keep this dairy free by replacing cottage cheese with coconut cream or vegan Greek style yogurt use coconut cream in place of heavy cream for whipped cream. and use a vegan vanilla protein powder. The recipe will also work with Greek yogurt in place of cottage cheese, but it's a bit more tangy so I'd add a bit more sweetener. Yogurt is also a bit more icy than cottage cheese when frozen!
