Cottage Cheese Egg White Cups
Meal prep just got easier (and protein-packed)! These egg white muffin cups with cottage cheese are the perfect addition to a high-protein breakfast or snack for busy mornings. Light, fluffy, and low in carbs and fat, these make a great post or pre workout meal.
I have 2-3 of these after a workout for an easy protein boost and add carbs and more protein to help with my post workout fuel. My daughter loves these in her lunchbox as well!

Ingredients
- 2 cup2 cup2 cup Egg Whites
- 0.5 cup0.5 cup0.5 cup Cottage Cheese, Low-Fat
- 0.5 cup0.5 cup0.5 cup Spinach, chopped
- 12 whole12 whole12 whole Tomato, Grape, cut in half
- 0.25 tsp0.25 tsp0.25 tsp Real Salt - Redmond
- 2 pinch2 pinch2 pinch Black Pepper
- 1 pinch1 pinch1 pinch Turmeric
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix egg whites and cottage cheese, add seasonings and then add spinach and mix.
- Spray muffin tin and fill almost to the top with the egg mixture.
- Add 2 halves of a grape tomato (aka 1 full tomato) into each cup.
- Bake at 375 for 30-35 min until firm. (They will puff up as they cook and settle down as they cool.)
- Make sure to cool completely before removing from tin and storing in the fridge.

How much protein is on one egg bite?!?
Should you eat B4 workout, or after— what is best. I usually only eat a banana with almond butter B4 a workout then eat, toast with almond butter & blueberries with cottage cheese. I only eat two meals a day, with fruit in-between. Thanks! Looks great
There’s about 6g of protein in one. I usually eat 2-3 after because I workout early and usually just have a protein shake since it’s easier to drink my protein than eat that early. But you can eat it before! It’s a good boost of protein either way! ♥️
