This one-pan cauliflower gnocchi with ground turkey recipe is quick, easy, and so incredibly delicious. Made in 30 minutes, it's rich, creamy, and the perfect healthy comfort meal for the whole family. Enjoy it as is, with a side salad, or a piece of crusty French bread.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a food processor or blender, combine the zucchini, tofu, chicken broth, and red wine vinegar and blend until smooth. Approximately 1 minute. Set aside.
  2. Saute the ground turkey and onion in a large skillet over medium-high heat for about 7-10 minutes or until lightly browned.
  3. Add the garlic and saute until fragrant. Approximately 30-60 seconds.
  4. Pour in the zucchini tofu mixture, diced tomatoes, and gnocchi and stir to combine. Bring to a boil, cover the pan, and reduce the heat to medium. Cook for 5 minutes.
  5. Remove the cover from the pan, add in the basil and Italian seasoning, and cook for several more minutes or until the basil is wilted.
  6. Season with salt and pepper to taste and serve immediately with some parmesan cheese and cracked black pepper if desired. Enjoy!
