Creamy Cauliflower Gnocchi With Ground Turkey
This one-pan cauliflower gnocchi with ground turkey recipe is quick, easy, and so incredibly delicious. Made in 30 minutes, it's rich, creamy, and the perfect healthy comfort meal for the whole family. Enjoy it as is, with a side salad, or a piece of crusty French bread.
Ingredients
- 5 oz5 oz5 oz Zucchini, peeled and chopped
- 5 oz5 oz5 oz Silken Tofu
- 0.333 cup0.333 cup0.333 cup Chicken Broth
- 2 Tbsp2 Tbsp2 Tbsp Red Wine Vinegar, can sub apple cider vinegar
- 16 oz16 oz16 oz Ground Turkey
- 0.5 whole0.5 whole0.5 whole Onion, finely chopped
- 4 clove4 clove4 clove Garlic, minced
- 14 oz14 oz14 oz Diced Tomatoes, with juices
- 1 lb1 lb1 lb Cauliflower Gnocchi - Trader Joe's
- 1 cup1 cup1 cup Basil, Fresh, roughly chopped
- 1 Tbsp1 Tbsp1 Tbsp Italian Seasoning
- 1 pinch1 pinch1 pinch Salt and Pepper, to taste

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a food processor or blender, combine the zucchini, tofu, chicken broth, and red wine vinegar and blend until smooth. Approximately 1 minute. Set aside.
- Saute the ground turkey and onion in a large skillet over medium-high heat for about 7-10 minutes or until lightly browned.
- Add the garlic and saute until fragrant. Approximately 30-60 seconds.
- Pour in the zucchini tofu mixture, diced tomatoes, and gnocchi and stir to combine. Bring to a boil, cover the pan, and reduce the heat to medium. Cook for 5 minutes.
- Remove the cover from the pan, add in the basil and Italian seasoning, and cook for several more minutes or until the basil is wilted.
- Season with salt and pepper to taste and serve immediately with some parmesan cheese and cracked black pepper if desired. Enjoy!
