Creamy Strawberry Popsicles (with Hidden Cauliflower!)
These delicious and creamy strawberry popsicles are packed with hidden nutrients from cauliflower! Perfect for toddlers, kids, and picky eaters. You can make them vegan and dairy free as well!
Ingredients
- 1 cup1 cup1 cup Freeze Dried Strawberries
- 1 cup1 cup1 cup Strawberries, stems removed, rinsed, and dried
- 1 cup1 cup1 cup Frozen Cauliflower Rice, or frozen florets
- 3 Tbsp3 Tbsp3 Tbsp Pure Maple Syrup, or honey - plus more to taste
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 1 cup1 cup1 cup Heavy Cream (Whipping Cream), or vegan heavy whipping cream, cold

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place freeze dried strawberries in a food processor or blender, and blend until powdery.
- Add strawberries, cauliflower rice, maple syrup, and vanilla extract, and blend until a smooth mixture is formed. If you want, you can strain this mixture to remove the strawberry seeds. I don't mind the texture so I leave mine in. Place in the fridge.
- Pour heavy cream in a mixing bowl, and whip until stiff peaks form.
- Add in the strawberry mixture and mix until just combined. Taste to add more sweetener, if you prefer.
- Transfer to a popsicle mold. Freeze for at least 4 hours.
- Enjoy!
Notes
- Use packaged frozen cauliflower rice or florets to cut down on time. These are already partially cooked so you can skip the step of cooking them yourself.
- You can substitute maple syrup with Medjool dates if you like. Soak in hot water for 20 minutes then cool before blending with the strawberry mixture.
