Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Place freeze dried strawberries in a food processor or blender, and blend until powdery.
  2. Add strawberries, cauliflower rice, maple syrup, and vanilla extract, and blend until a smooth mixture is formed. If you want, you can strain this mixture to remove the strawberry seeds. I don't mind the texture so I leave mine in. Place in the fridge.
  3. Pour heavy cream in a mixing bowl, and whip until stiff peaks form.
  4. Add in the strawberry mixture and mix until just combined. Taste to add more sweetener, if you prefer.
  5. Transfer to a popsicle mold. Freeze for at least 4 hours.
  6. Enjoy!

Notes

  • Use packaged frozen cauliflower rice or florets to cut down on time. These are already partially cooked so you can skip the step of cooking them yourself.
  • You can substitute maple syrup with Medjool dates if you like. Soak in hot water for 20 minutes then cool before blending with the strawberry mixture.
