Creamy Tomato Basil Chicken and Orzo
This creamy tomato basil chicken and orzo is the perfect comfort meal for any day of the week.
Ingredients
- 1 lb1 lb1 lb Boneless Skinless Chicken Breasts
- 1/2 Tbsp1/2 Tbsp1/2 Tbsp Extra Virgin Olive Oil
- 2 Tbsp2 Tbsp2 Tbsp Salted Butter
- 1/21/21/2 Onion, (sweet onion), diced
- 2 cloves2 cloves2 cloves Garlic, minced
- 1 cup1 cup1 cup Pasta, (orzo), uncooked
- 1 tsp1 tsp1 tsp Red Pepper Flakes, optional
- 1 cup1 cup1 cup Tomato, finely chopped
- 2 cups2 cups2 cups Spinach, fresh
- 2 Tbsp2 Tbsp2 Tbsp fresh Basil
- 1 1/2 cups1 1/2 cups1 1/2 cups Chicken Bone Broth
- 1/2 cup1/2 cup1/2 cup Heavy Cream (Whipping Cream)
- Salt and Pepper, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350F. Season chicken with salt and pepper to taste. Heat the olive oil in a cast iron skillet or oven safe pan over medium/high heat. Place the chicken in the pan and brown on both sides. The chicken should cook for about 3-4 minutes on each side depending on the thickness of the chicken breast. Once the chicken is browned, remove it from the pan.
- Reduce the heat to medium and add the butter into the pan. Once it’s melted, add the onion, and garlic cloves. Saute until they are a little brown and fragrant. Then stir in the orzo and red pepper flakes. Saute for another minute or so. Add in the chopped tomatoes and spinach, and basil and stir until the spinach is wilted.
- Add in the chicken broth and heavy cream and then bring the mixture to a boil. Season with salt and pepper to taste. Remove from heat and then add the chicken breast back into the pan. Bake for 20-25 minutes or until the chicken has an internal temperature of 165F. Enjoy with freshly grated parmesan and basil.
