Crispy Bacon Pasta Salad

- 1 cup1 cup1 cup Tomato, Cherry, halved
- 0.5 cup0.5 cup0.5 cup Basil, Fresh, chopped
- 0.5 cup0.5 cup0.5 cup Parmesan Cheese, shaved *can sub vegan
- 0.25 cup0.25 cup0.25 cup Extra Virgin Olive Oil
- 2 Tbsp2 Tbsp2 Tbsp Lemon Juice
- 2 tsp2 tsp2 tsp Lemon Zest
- 1 clove1 clove1 clove Garlic, finely minced
- 1 pinch1 pinch1 pinch Salt and Pepper, to taste
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Bring a large pot of salted water to a boil. Cook the pasta to al dente according to the package instructions. Drain the pasta and rinse until cooled.
- While the pasta is cooking, cook the diced bacon until crispy. Place the cooked bacon on a paper towel. Once cool enough, chop the crispy bacon as fine as possible.
- In a salad bowl, combine the cooked pasta, tomatoes, basil, parmesan cheese, olive oil, lemon juice, lemon zest, garlic, and salt and pepper and gently toss together.
- Top with the crispy bacon and some grated parmesan if desired. Enjoy!
