Process

  1. Bring a large pot of salted water to a boil. Cook the pasta to al dente according to the package instructions. Drain the pasta and rinse until cooled.
  2. While the pasta is cooking, cook the diced bacon until crispy. Place the cooked bacon on a paper towel. Once cool enough, chop the crispy bacon as fine as possible.
  3. In a salad bowl, combine the cooked pasta, tomatoes, basil, parmesan cheese, olive oil, lemon juice, lemon zest, garlic, and salt and pepper and gently toss together.
  4. Top with the crispy bacon and some grated parmesan if desired. Enjoy!
