Crockpot Shredded Chicken
I adore the flexibility of this shredded chicken—it's my go-to for easy meal prep. Whenever I whip up a batch, I go big, using it in various meals throughout the week. Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Season the chicken breasts with salt, pepper, and garlic powder on both sides, then place them in a single layer in the slow cooker..
- Pour the chicken stock on top of the seasoned chicken.
- Cover the slow cooker with a lid and set it to cook on high for 4-5 hours or until the chicken is fully cooked and easily shreds with two forks.
- Once cooked, carefully shred the chicken using two forks. You can do this in the slow cooker or transfer to a cutting board to do so.
- Return the shredded chicken back into the broth in the slow cooker and let it simmer for an additional 10-20 minutes to absorb more flavor.
- Serve the warm shredded chicken over rice, in tacos, on nachos, in enchiladas, or tossed with your favorite sauce.
Notes
Feel free to mix things up with this slow cooker shredded chicken recipe! Swap in low-sodium chicken stock or water if you're watching your sodium intake, and don't hesitate to play around with the salt levels if you're using regular chicken stock. Since slow cooker temps and cook times can vary, it's a good idea to check the chicken about halfway through and adjust as needed. And here's a tip to keep things juicy: after shredding, toss the chicken back into those tasty juices in the slow cooker. This step adds an extra layer of flavor and ensures your chicken stays moist and delicious.
