Curry Chicken Salad
I love chicken salads and this Curry Chicken Salad is bursting with flavor from the curry and hint of ginger but when the raisins join the party..... WOW! if you love curry then you will love this salad. I also have at least a dozen other chicken salad recipes for you to enjoy so you can’t possibly ever get bored!
Ingredients
- 4 cups4 cups4 cups Chicken Breast, cooked and cubed
- 4 sprigs4 sprigs4 sprigs Celery, diced (4 ribs)
- 111 Onion, small, diced
- 1/2 cup1/2 cup1/2 cup Raisins, (must be unsweetened for Whole30)
- 3/4 cup3/4 cup3/4 cup Mayonnaise
- 111 Lime, small, juiced
- 2 Tbsp2 Tbsp2 Tbsp Curry Powder
- 1/2 tsp1/2 tsp1/2 tsp ground Ginger
- 1 tsp1 tsp1 tsp Salt
- 2 Tbsp2 Tbsp2 Tbsp Cilantro, chopped
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine in a small bowl, mayo, curry, ginger, salt, cilantro and lime juice mixing well.
- In a large bowl combine chicken, celery, onions and raisins.
- Stir in dressing and toss well.
- Enjoy!
