Easy & Fluffy Marble Pound Cake (Edit recipe)

The secret ingredient is love and high quality extra virgin olive oil! I love a simple pound cake but I decided to make mine slightly more interesting with an added layer of chocolate to the top. This recipe is easy to make and delicious.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350ºF
  2. Sray a 9×5 inch loaf pan with nonstick spray
  3. In a large bowl, beat together using a whisk Greek yogurt, sugar and olive oil together
  4. Add the eggs one a time to that same bowl
  5. Add vanilla extract to your wet mixture
  6. To the mixture, add flour, salt, baking soda and baking powder, set aside
  7. Reserve some batter on the side and add your cocoa powder to that
  8. With a spatula. scrape the vanilla mixture it into the pan
  9. Add your chocolate mixture over the top of the vanilla mixture, marble it in if desired
  10. Bake the cake for 50 to 55 minutes, or until it is golden
  11. Cool on a wire rack
  12. Once cooled, top off with powdered sugar for presentation
  13. Serve and enjoy!

Notes

If you stick a toothpick and it comes out dry it's ready to go! Best enjoyed with a side of coffee or tea.
