Roasted Pepper & Sausage Pasta Salad
This roasted bell pepper and sausage pasta salad is packed with fresh summer flavour and hearty enough for an easy lunch or dinner. Sweet roasted bell peppers, zucchini, and juicy cherry tomatoes are tossed with savoury chicken sausage, penne pasta, fresh spinach, and a light Italian dressing for a colourful and satisfying dish. It’s simple to make, great for meal prep, and delicious served warm or chilled straight from the fridge.
Ingredients
- 2 whole2 whole2 whole Bell Pepper, chopped
- 0.5 whole0.5 whole0.5 whole Zucchini, chopped
- 0.5 whole0.5 whole0.5 whole Onion, chopped
- 1 cup1 cup1 cup Tomato, Cherry, halved

- 2 cloves2 cloves2 cloves Garlic, minced

- 4 oz4 oz4 oz Penne Pasta, can sub gluten-free

- 2 whole2 whole2 whole Chicken Sausage, precooked & chopped *can sub turkey sausage

- 1 cup1 cup1 cup Spinach, finely chopped
- 0.25 cup0.25 cup0.25 cup Italian Dressing, 1/4-1/2 cup to taste
- 2 Tbsp2 Tbsp2 Tbsp Apple Cider Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Italian Seasoning

- 1 pinch1 pinch1 pinch Salt and Pepper, to taste
- 4 cups4 cups4 cups Lettuce, Spring Mix Salad Greens, optional

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 425ºF and prepare a large baking sheet with non-stick baking spray.
- Place the chopped bell peppers, zucchini, and onion on the prepared baking sheet and roast for 10 minutes, stirring halfway through.
- Add the cherry tomatoes and garlic, and roast for another 5 minutes. Remove from the oven and place into a large mixing bowl.
- While the veggies are roasting, bring a large pot of salted water to a boil and prepare the penne pasta according to the package directions. Drain the pasta and put it into the large mixing bowl with the roasted veggies.
- Add in the sausage, minced spinach, Italian dressing, apple cider vinegar, and Italian seasoning, and gently stir to combine.
- Season with salt and pepper to taste and toss with mixed spring greens if desired.
- Serve warm, room temperature, or cold. Enjoy!
