- Melt butter In large nonstick skillet over medium heat.
- Add onions to skillet, stirring occasionally for 5 minutes. Stir in salt and 2 Tsp Everything bagel seasoning.
- Next, stir in honey until combined. Add beef stock, stirring occasionally until stock onions have absorbed beef stock and are golden brown and caramelized, about 20 minutes.
- Remove caramelized onions to bowl; cover with aluminum foil to keep warm (*Use this same skillet to toast the buns over medium heat while burgers have a 2-3 minutes of cooking time left*).
- Meanwhile, place nonstick grill pan over medium heat. Add 2 burger patties to hot grill pan. Cook 5-6 minutes before turning burgers; continue cooking additional 3-5 minutes, or until desired doneness. During the last 1-2 minutes of cooking, top each patty with 2 slices Swiss cheese. Add 1 Tbsp water to bottom of grill pan then quickly cover with a lid for 20-30 seconds (this creates steam to quickly melt the cheese).
- To a small bowl, combine mayonnaise, remaining 1/2 Tsp Everything bagel seasoning and green onions.
- To assemble burgers, divide mayonnaise mixture and spread over each toasted bottom bun. Top each bun with 2 butter lettuce leaves. Place cheese-covered burger on top of lettuce. Divide caramelized onions and place atop each burger. Close with toasted top buns. Serve immediately.
Notes
Burgers can also be made on a gas grill. Preheat grill to 450 degrees. Grill burger patties on well-oiled grill rack, turning once, until desired doneness (about 4-5 minutes per side). Add cheese during the last minute of grilling. Burger buns can be toasted directly on grill rack during the last 30-60 seconds of grilling. Caramelized onions can be made up to 2 days in advance, stored in refrigerator, then quickly warmed in a skillet before topping burgers. To make gluten-free, substitute your choice of gluten-free burger buns. Nut-free. Egg-free option. Dairy-free option.
