Floating Tacos
This is an old family meal that my mom used to make. I’ve adjusted it for my family’s taste but it is very flexible and so tasty! Our son Wyatt loves this dish. It is spicy and crunchy…so good. It is kind of like deconstructed crunchy tacos, hope you enjoy.
Ingredients
- 1 lb1 lb1 lb Ground Beef

- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- .5.5.5 Red Onion, small dice
- .5.5.5 Bell Pepper, small dice
- .5.5.5 Jalapeño Pepper, minced
- 111 Celery, small dice
- 2 Tbsp2 Tbsp2 Tbsp Taco Seasoning - Primal Palate

- .25 cup.25 cup.25 cup Green Chilies
- .5 cup.5 cup.5 cup Red Enchilada Sauce - Siete Foods

- .25 cup.25 cup.25 cup Water
- 15 oz15 oz15 oz Pinto Beans, drained and rinsed

- 8 oz8 oz8 oz Corn Chips - Fritos, organic
- 1 cup1 cup1 cup Cheddar Cheese, shredded

- .25 cup.25 cup.25 cup Salsa
- 111 Green Onion (Scallion), sliced

- .25 cup.25 cup.25 cup Black Olives, sliced

- 111 Avocado, diced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a skillet on medium heat cook the ground beef in oil until cooked through. Stir and break up periodically. About 7 minutes.
- Add vegetables and cook 5 minutes.
- Add seasonings, liquids, and beans, stir and cook 10 minutes more. Stir periodically.
- Spoon over corn chips and top with favorite toppings. Enjoy
Notes
You can top with cilantro, sour cream, or whatever toppings you want that you enjoy with Mexican flavors. You can use black beans as well which I love too. My mom used kidney beans so you try it different ways and see which you prefer 🙂

I love this deconstructed version. I will definitely forward it to my son, who loves taco night.
It’s a fun dish for sure. My mom doesn’t love cooking so this was a dinner on repeat when I was a kid. And I love that it is versatile and you can add so many different toppings. Hope he enjoys 🙂
