Floating Tacos (Edit recipe)

This is an old family meal that my mom used to make. I’ve adjusted it for my family’s taste but it is very flexible and so tasty! Our son Wyatt loves this dish. It is spicy and crunchy…so good. It is kind of like deconstructed crunchy tacos, hope you enjoy.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a skillet on medium heat cook the ground beef in oil until cooked through. Stir and break up periodically. About 7 minutes.
  2. Add vegetables and cook 5 minutes.
  3. Add seasonings, liquids, and beans, stir and cook 10 minutes more. Stir periodically.
  4. Spoon over corn chips and top with favorite toppings. Enjoy

Notes

You can top with cilantro, sour cream, or whatever toppings you want that you enjoy with Mexican flavors. You can use black beans as well which I love too. My mom used kidney beans so you try it different ways and see which you prefer 🙂
