Gluten free chocolate chocolate chip cookies
It has been many years since I didn’t have at least one bag of semi-sweet chocolate chips in the house. When you are a recipe creator and craving a sweet treat you can get pretty creative with the pantry stock. I did have one bag of white chocolate chips so I decided to reverse the typical recipe. I made chocolate cookies and used white chocolate chips. The end result was pretty darn tasty! Hope you enjoy.
Ingredients
- .5 cup.5 cup.5 cup Butter, Salted, room temp

- .25 cup.25 cup.25 cup Cocoa Powder

- 1 cup1 cup1 cup Maple Sugar, Coconut sugar or brown sugar works too

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 1.33 cup1.33 cup1.33 cup Gluten-Free All Purpose Baking Flour - Bob's Red Mill, or King Arthur
- .5 tsp.5 tsp.5 tsp Baking Soda
- .5 tsp.5 tsp.5 tsp Salt

- 222 Eggs, room temperature
- 1 cup1 cup1 cup Sugar-Free White Chocolate Chips, or any chocolate chips you like

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a small saucepan, melt the butter and cocoa powder. Heat on medium-low until well blended. Stir periodically.
- In a mixing bowl add the sugar and vanilla. When butter and cocoa powder are melted and blended add that in. Using a paddle attachment or spoon mix to combine well.
- Add the flour in about 1/2 cup at a time. Stir.
- Add an egg, stir.
- Repeat until you’ve added the rest of the flour and eggs.
- Add in baking soda and salt and stir.
- Add in chocolate chips and stir.
- Refrigerate while the oven heats up.
- Preheat oven to 350 degrees.
- Place a sheet of parchment paper onto a cookie sheet.
- Scoop out 8-9 cookies per sheet and bake for 10-11 minutes. Let cool for 2 minutes on pan before removing.
Notes
You can add chopped nuts if desired.
