Gluten Free Potato Wedges
These potato wedges have the perfect balance of crispy outsides and fluffy insides. Enjoy them as a standalone snack or as a great side for burger night! Seasoning measurements in this recipe are approximate—feel free to season to taste with your favorite spices. Keep in mind that potatoes can absorb quite a bit of seasoning, so don’t hesitate to add a little extra for more flavor.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 400°F and line a baking sheet with parchment paper. (For air fryer instructions, see the last step.)
- Begin by cutting medium-sized red potatoes into wedges.
- In a bowl, toss the potato wedges with olive oil, ensuring they are well-coated. Season generously with salt, pepper and garlic powder.
- Spread the seasoned potato wedges evenly over the prepared parchment-lined baking sheet.
- Place the baking sheet in the preheated oven and bake for 25 minutes.
- After the initial 25 minutes, carefully remove the baking sheet from the oven. Toss the potato wedges to ensure even cooking.
- Return the baking sheet to the oven and continue to bake for an additional 25 minutes or until the potato wedges are golden and crispy on the outside while remaining fluffy on the inside.
- Once done, remove from the oven to cool slightly before enjoying.
- Alternatively, cook them in your air fryer: Preheat your air fryer to 400°F. Add your potatoes, being mindful not to overcrowd the basket. Depending on the quantity and the size of your air fryer, you may need to cook in batches. Air fry for about 20-25 minutes, shaking the basket several times throughout to ensure even cooking. If the air fryer is too crowded, the cooking time will be longer.

Thoroughly coat your potato wedges with olive oil by giving them a good toss before cooking. About halfway through the baking time, toss them again to ensure even cooking, resulting in a golden crispiness all around. You can also get creative with your seasonings! Adapt the flavor profile to your preferences by adding your favorite spices and herbs. Whether it's paprika, garlic powder, thyme, sage, or rosemary - these wedges are so versatile!
