Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Boil the rice according to package directions.
  2. Cut the chicken into 1/2" pieces and toss with taco seasoning. Add to a frying pan with 1 tbsp olive oil and cook on medium until chicken is fully cooked.
  3. Add white rice to the bowl. Top with chicken.
  4. Add shredded lettuce, salsa and mashed avocado.
