A hearty flavorful easy to make gluten-free tortellini soup. You can also use regular cheese tortellini if you are not gluten-free.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a large stockpot, set over medium heat add the Italian sausage and break it up into little pieces. Drain and set aside, leaving 2 tablespoons of the sausage grease in the pan. If you do not have enough sausage grease add the extra virgin olive oil.
  2. Add the chopped onions and sauté until they are soft and almost translucent.
  3. Add the minced garlic and sauté for 30 seconds.
  4. Add 1/4 cup of the broth and scrape up any bits at the bottom of the pan, then add the remaining broth.
  5. Add the diced tomatoes and thyme, stir and let it simmer for 10 minutes.
  6. Add the kale/spinach and cook until tender.
  7. If there isn't enough broth add no more than a 1/4 to 1/2 cup of water.
  8. Add the cheese tortellini and cook them per package directions.
  9. Serve with grated parmesan cheese if desired.

Notes

You can use regular or gluten-free cheese tortellini. They usually only need to cook for a few minutes so watch that you don't overcook them. Adding some water is optional to make the soup have more broth. Do not add more than 1/2 cup as it will water down the flavor of the soup. Taste and add salt as desired.
