Gluten-Free Tortellini Soup
A hearty flavorful easy to make gluten-free tortellini soup. Made in one pot and you can use regular cheese tortellini if you are not gluten-free.
Ingredients
- 1 lb1 lb1 lb Italian Sausage, Mild, casings removed

- 2-3 Tbsp2-3 Tbsp2-3 Tbsp Extra Virgin Olive Oil

- 1 whole1 whole1 whole Onion, small, chopped
- 3 cloves3 cloves3 cloves Garlic, minced

- 4 cups4 cups4 cups Chicken Broth, Unsalted, can sub in chicken stock

- 14.5 oz14.5 oz14.5 oz Diced Tomatoes, 1 can
- .5 tsp.5 tsp.5 tsp Thyme, Dried

- 1 bunch1 bunch1 bunch Kale, stems removed and chopped or Baby Spinach
- .25-.5 cup.25-.5 cup.25-.5 cup Water
- 9 oz9 oz9 oz Gluten-Free Tortellini, Can sub in regular tortellini
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Parmesan Cheese, Optional

- .5 tsp.5 tsp.5 tsp Salt

- .25 tsp.25 tsp.25 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large stockpot, set over medium heat add the Italian sausage and break it up into little pieces. Cook until it's no longer pink.
- Drain and set aside, leaving 2 tablespoons of the sausage grease in the pan. If you do not have enough sausage grease add the extra virgin olive oil.
- Add the chopped onions and sauté until they are soft and almost translucent.
- Add the minced garlic and sauté for 30 seconds.
- Add 1/4 cup of the broth and scrape up any bits at the bottom of the pan, then add the remaining broth.
- Add the diced tomatoes and thyme, stir and let it simmer for 10 minutes.
- Add the kale/spinach and cook until tender.
- If there isn't enough broth add no more than a 1/4 to 1/2 cup of water.
- Add the cheese tortellini and cook them per package directions.
- Serve with grated parmesan cheese if desired.
Notes
You can use regular or gluten-free cheese tortellini. They usually only need to cook for a few minutes so watch that you don't overcook them. Adding some water is optional to make the soup have more broth. Do not add more than 1/2 cup as it will water down the flavor of the soup. Taste and add salt as desired.
