Sausage, Potato, and Kale Soup (Edit recipe)

Sausage, Potato, and Kale Soup is a hearty and flavorful soup that features Italian sausage, tender potatoes, and nutritious kale. This is a perfect for a cold winter day. It can be served as a main course with crusty bread or as a starter for a larger meal. Leftovers can be stored in the refrigerator for several days and reheated for a quick and easy meal. This version is dairy-free and Whole30 compatible.

Ingredients

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Start by heating 1 tbsp of olive oil in a large pot to medium heat.
  2. Add the sliced sausage into the pan and let it brown on both sides or for about 5 minutes.
  3. Add the diced white onions and minced garlic to the pan and saute for 2 minutes.
  4. Add Little Palate Garden Herb seasoning, Italian seasoning, parsley, thyme, rosemary, red pepper flakes, black pepper and salt to the pot. Saute for another 2-3 minutes.
  5. Add the chicken broth, coconut milk, and yukon potatoes to the pot. Bring the soup to a boil and cook for about 25 minutes or until potatoes are fork tender.
  6. Add the roughly chopped kale to the pot and stir until wilted. Taste the soup and add more salt if needed (I find this depends on the chicken broth used).
  7. Serve and enjoy!

Notes

If you are on the Whole30, be sure to find compatible Italian sausage- I like Bilinkski's best.// You can use mild or hot sausage depending on your preference.
