Gluten Free Valentine’s Day Cookie
feeling choc(olate) full of love with these loaded Valentine’s Day cookies!! does it get any better than a gluten free cookie loaded with your favorite valentine's day goodies?
Ingredients
- 2 cups2 cups2 cups Gluten-Free Flour
- 0.5 cup0.5 cup0.5 cup Almond Flour
- 0.5 cup0.5 cup0.5 cup Cornstarch
- 1.5 tsp1.5 tsp1.5 tsp Baking Soda
- 1 tsp1 tsp1 tsp Salt
- 1 tsp1 tsp1 tsp Xanthan Gum, optional if your flour blend already has it
- 0.75 cup0.75 cup0.75 cup Butter, Unsalted, softened
- 1 Tbsp1 Tbsp1 Tbsp Vanilla Extract
- 2 whole2 whole2 whole Eggs
- 1.5 cups1.5 cups1.5 cups Brown Sugar
- 1 cup1 cup1 cup M&M's, Milk Chocolate (Plain), grab the Cupid mix if you can!
- 1 cup1 cup1 cup White Chocolate, chopped
- 0.5 cup0.5 cup0.5 cup Gluten-Free Pretzel Sticks, crushed
- 0.5 cup0.5 cup0.5 cup Sprinkles, pink, red, & white!
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 350F.
- Combine flour, almond flour, cornstarch, baking soda, xanthan gum, & salt in a bowl.
- In a separate bowl beat egg, butter, vanilla, & sugar until light in color and fluffy.
- Gradually add dry ingredients to wet ingredients. Then gently fold in m&ms, white chocolate chips, pretzels, and sprinkles.
- Use a cookie scoop to drop cookie dough onto your baking sheet that is lined with parchment paper.
- Bake for 10-12 minutes. Let the cookies rest on the pan for 10 minutes and then move to a cooling rack.
- Makes 24 cookies.
