This scone recipe reimagines the classic comfort food using our single-ingredient Otto's Naturals - Cassava Flour to create tender, fluffy scones that rival any bakery version. And the best part? They're loaded with chocolate chips in every bite! Drizzle with a simple glaze for an even sweeter treat.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Line a baking sheet with parchment paper.
  2. In a food processor, place the cassava flour, sugar, baking powder, and salt. Add the cold butter cubes to the food processor.
  3. Pulse until the mixture is crumbly. Pour the mixture into a large mixing bowl.
  4. Whisk the yogurt and water together. Add to the flour mixture. Stir until the dough forms a loose ball. Add the chocolate chips and stir until they are evenly distributed.
  5. Transfer the mixture to a lightly floured piece of parchment paper. Shape the dough into a flat disk that is about 1-inch high and about 6.25-inches round. Cut the disk into 8 equal wedges.
  6. Place each scone on the baking sheet. Chill the scones in the freezer for 20-30 minutes. While the scones are chilling, preheat the oven to 375°F.
  7. Bake for 30-35 minutes. The scones should be lightly browned around the edges.
  8. Let cool before enjoying! For the best flakey texture, let the scones cool completely and allow them to chill in the fridge before serving.

Notes

*If you're not a fan of chocolate, dried chopped fruit (such as berries) and 2 teaspoons of citrus zest make for a wonderful fruity treat! We recommend soaking 1/2 cup dried fruit in hot water until tender, draining, and patting dry. This prevents the fruit from soaking up moisture from the scones. *If you don't want any mix-ins, plain scones are great with a bit of butter (or clotted cream!) and jam. Store your baked scones at room temperature for up to 5 days in an airtight container or freeze them for up to 3 months. We recommend wrapping them individually in plastic wrap if you plan on freezing them. Thaw at room temperature when ready to enjoy.
