- 333 Tomatillo, husked medium
- 111 Zucchini, or Italian squash, chopped
- 111 Jalapeño Pepper, pepper, sliced lengthwise
- 222 Serrano, Raw, sliced lengthwise
- .25.25.25 White Onion, chopped
- 222 Garlic, medium cloves

- .25 cup.25 cup.25 cup Avocado Oil, neutral-tasting oil (such as, olive oil))
- .5 tsp.5 tsp.5 tsp Kosher Salt

- .5 cup.5 cup.5 cup Cilantro

- In a small pot of boiling water, add the husked tomatillos and chopped zucchini.
- Parboil for 3-5 minutes, or just until the tomatillos change color.
- Drain and set aside to cool.
- Heat the oil in a medium skillet over medium heat.
- Add the sliced jalapeño and serrano peppers, and sauté for 2-3 minutes, or until slightly softened.
- Add the chopped onion and sauté for an additional 5 minutes, or until softened and translucent.
- Stir in the minced garlic and cook for 1 minute more.
- Set aside to cool.
- Add the parboiled tomatillos, zucchini, sautéed peppers, onion, garlic, salt and cilantro to a blender.
- Blend until smooth and creamy.
- Taste and adjust the salt if needed.
