Ham, tomato and mozzarella potato quiche
Perfect for meal preps, holidays or brunch. This easy quiche is customizable to whatever meats and veggies you prefer. Best thing is this tastes good for the whole week.
Ingredients
- 777 Potatoes, Russet, (Small red, boiled)
- 0.5 cup0.5 cup0.5 cup Ham, Chopped
- 0.25 cup0.25 cup0.25 cup Tomato, Diced
- 333 Eggs
- 222 Egg Whites
- 0.25 cup0.25 cup0.25 cup Mozzarella, Shredded
- 0.125 cup0.125 cup0.125 cup Almond Milk
- 0.25 tsp0.25 tsp0.25 tsp Lawry’s Seasoning Salt
- 0.25 tsp0.25 tsp0.25 tsp Garlic Powder

- 0.25 tsp0.25 tsp0.25 tsp Salt

- 0.25 tsp0.25 tsp0.25 tsp Black Pepper

- 2 Tbsp2 Tbsp2 Tbsp Butter, Unsalted, Room temp

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees Fahrenheit
- In a large pot bring water to a boil on high heat
- Boil 7 small and cleaned red russets potatoes for 20 minutes or until fork tender
- Drain water and set potatoes to the side
- Using a cutting board place 5-6 slices of uncured black forest ham on top of each other and dice into small squares
- Next dice 1/4 cup of tomatoes
- In a medium bowl whisk together eggs, egg whites, ham, tomatoes, salt, pepper and almond milk until well combined
- Coat a circular glass dishware (9.5in/24cm) with room temp butter
- Place boiled potatoes in a singular layer in the dish
- Using a fork press down on all the potatoes to form a thin crust
- Then go over the potatoes with the bottom of a clean cup by pressing down in a circular motion to fully cover the dish
- Sprinkle Lawry’s Seasoning Salt and garlic powder over the potato crust
- Pour the egg mixture into the dish
- Lastly top with shredded mozzarella
- *Optional top with light Arugula or Spinach
- Bake for 45-55 minutes
- Lasts for 6 days
Notes
You can peel the skin on the potatoes but I prefer to leave them on. This pairs perfectly with a drizzle of sriracha
