Healthy Cranberry Orange Loaf
This simple but delicious bread is perfect with a cup of coffee or with a scoop of ice cream for dessert. It would make the perfect thing to serve to house guests over the holidays or bring as a little homemade gift for loved ones! Plus it's made with simple, nourishing ingredients - a win win!
Ingredients
- 2 cups2 cups2 cups White Whole Wheat Flour
- 2 tsp2 tsp2 tsp Baking Powder
- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 3 - 4 Tbsp3 - 4 Tbsp3 - 4 Tbsp Orange Zest, zest of two oranges
- 1 tsp1 tsp1 tsp Ground Cinnamon
- 0.5 tsp0.5 tsp0.5 tsp Salt
- 0.5 cup0.5 cup0.5 cup Orange Juice, freshly squeezed
- 0.25 cup0.25 cup0.25 cup Coconut Oil, melted
- 222 Eggs
- 0.5 cup0.5 cup0.5 cup Pure Maple Syrup
- 1 tsp1 tsp1 tsp Vanilla Extract
- 0.25 tsp0.25 tsp0.25 tsp Almond Extract
- 1 cup1 cup1 cup fresh Cranberries, plus more for topping
- 0.5 cup0.5 cup0.5 cup Powdered Sugar, I used the Lakanto monkfruit version
- 1 Tbsp1 Tbsp1 Tbsp Orange Juice, freshly squeezed
- 1 tsp1 tsp1 tsp Orange Zest

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees. Line a baking loaf tin with parchment paper and non-stick spray (I use a coconut oil spray), and set aside.
- To a large mixing bowl, add whole wheat flour, baking powder, baking soda, orange zest, cinnamon, and salt. Whisk to combine.
- Add in orange juice, coconut oil, eggs, maple syrup, vanilla extract, and almond extract. Mix to combine, but avoid over-mixing.
- Gently fold in fresh cranberries.
- Pour into prepared loaf tin, and bake for ~50 minutes, until cake tester comes out clean and top is golden brown.
- While loaf cools, make Orange Glaze by whisking together powdered sugar, orange juice, and zest. If glaze is too thin, add more powdered sugar. If it's too thick, add more juice until you have your desired consistency.
- Pour glaze over loaf before cutting into slices. Store tightly in foil on the counter for up to 3 days or in an air-tight container in the fridge. Enjoy!
