Healthy Sugar Cookie Truffles
Easy, no bake, and wholesome sugar cookie truffles! Gluten free and with a protein boost, although your guests would never know! ðŸ¤
Ingredients
- 0.25 cup0.25 cup0.25 cup Vanilla Bean Ghee - 4th & Heart, Or plain ghee, or coconut oil* melted
- .25 cup.25 cup.25 cup Cashew Butter
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder
- 1 cup1 cup1 cup Almond Flour
- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- .25 tsp.25 tsp.25 tsp Almond Extract
- 1 Tbsp1 Tbsp1 Tbsp Sprinkles

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine all the dough ingredients together until smooth
- The vanilla ghee add to the distinct sugar cookie taste here, but plain ghee or coconut oil will also work
- Fold in sprinkles if you'd like in the cookie dough as well
- Refrigerate dough for 30 min
- Roll into balls. I used a 2tbsp cookie scoop
- Dip in melted white chocolate, drip of excess, place on parchment paper, and top with natural sprinkles (go super natural brand here)
- Place in the fridge 15min until white chocolate has hardened, then enjoy!
- Store in the fridge
