  1. In a large skillet, brown the ground beef and the onion together over medium heat. Once cooked, stir in the taco seasoning, the rice cauliflower and can of rotel. Cook until rice cauliflower is tender. Won’t take long.
  2. Once the mixture has been heated through, sprinkle shredded cheese over the top and allow it to melt.
  3. Serve on a bed of rice, spoon into tortillas or serve over a salad. Serve it with sour cream, avocado, cilantro, hot sauce, salsa, and more cheese if you like!
