High Protein No Sugar Peach Banana Bread Pudding
Bread-less bread pudding; the lightened-up, healthy, allergy-friendly kind. Gluten-free. Eggless. No dairy. No nuts, and also vegan. Protein-packed. No sugar. Only the natural sweetness of fresh peaches + ripe, mashed banana. Even though it’s egg-free there is a surprisingly “eggy” taste and texture that traditional, egg-laden bread pudding would have. Extra delicious with a drizzle of pure maple syrup.
Ingredients
- 0.5 cup0.5 cup0.5 cup Plant Based Butter, Softened at room temperature
- 1.5 cups1.5 cups1.5 cups Banana, 3 medium-large bananas; very ripe + mashed
- 2 tsp2 tsp2 tsp Pure Vanilla Extract
- 1.5 cups1.5 cups1.5 cups Gluten-free All-Purpose Flour - Primal Palate
- 1 cup1 cup1 cup Vanilla Protein Powder, Vegan
- 2 tsp2 tsp2 tsp Cornstarch
- 1 tsp1 tsp1 tsp Baking Soda
- 0.5 tsp0.5 tsp0.5 tsp Salt
- 1 tsp1 tsp1 tsp Ground Cinnamon
- 1 cup1 cup1 cup Sparkling Water, Flavored or plain
- 2.25 cups2.25 cups2.25 cups Peaches, Fresh, ripe peaches; cut into 1/2-inch pieces (about 3-4 peaches)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350°. Spray 9 x 9“ square, nonstick cake pan with nonstick spray; set aside.
- In bowl of stand mixer fitted with paddle attachment, or in large bowl using hand mixer, beat to combine plant butter, mashed banana and vanilla extract (mixture will be combined yet will not appear smooth).
- In medium bowl, whisk to combine gluten-free flour, protein powder, cornstarch, baking soda, salt and cinnamon.
- Add dry ingredients to bowl with plant butter mixture. Beat to partly combine, then add sparkling water. Beat to combine.
- Gently fold in peaches using rubber spatula.
- Spoon or pour into prepared pan, evenly spreading out with rubber spatula.
- Bake on middle rack of oven for 40-45 minutes, or until golden brown and center is no longer jiggly.
- Cool in pan atop wire rack for 20-25 minutes before removing to large plate or cutting surface. Slice into desired number of squares or even cut into 3-inch long x 1-inch wide bread pudding sticks for dipping into pure maple syrup (more kid-friendly served this way). Serve slightly warm or at room temperature.
