High Protein Queso Dip
Cheesy and bursting with flavor, and also ample protein to keep you satiated and your blood sugar stable! This makes for a great addition to the football spread. It tastes great with some bell peppers as dippers, but of course your favorite salty chip, too!
Ingredients
- .5 lb.5 lb.5 lb Ground Beef
- 2 cups2 cups2 cups Low-Fat Cottage Cheese
- .5 cup.5 cup.5 cup Pepper Jack Cheese
- .5 cup.5 cup.5 cup Mexican Cheese Blend
- 2 Tbsp2 Tbsp2 Tbsp Taco Seasoning
- 4 oz4 oz4 oz Green Chilies, Diced
- .25 cup.25 cup.25 cup Water

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook ground beef, drain, and set aside
- Blend cottage cheese, shredded cheese, taco seasoning, and water until smooth
- Pour into a large bowl and microwave in 30 second intervals for 1 1/2-2 minutes total until cheese is melted
- Add ground beef and diced chilis and stir to combine
- Serve right away with chopped bell peppers, tortilla chips, corn dippers, etc
- Keep stored in the fridge and reheat prior to enjoying
