High Protein Zucchini Muffins
These are a delicious breakfast treat to have on hand for those picky eaters! They are sweetened with no refined sugar, but they still taste delicious! They’re packed with veggies and protein, making them a nutrient dense muffin!
Ingredients
- 0.5 cup0.5 cup0.5 cup Vanilla Greek Yogurt, Or plain!
- 2 whole2 whole2 whole Eggs
- 0.333 cup0.333 cup0.333 cup Maple Syrup, Pure
- 0.5 cup0.5 cup0.5 cup Zucchini, Shredded
- 1 cup1 cup1 cup All Purpose Flour, Unbleached
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder
- 1 tsp1 tsp1 tsp Baking Powder
- 1 tsp1 tsp1 tsp Cinnamon, Saigon, Ground

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 350 degrees.
- Grease a cupcake pan (about 6 cupcakes).
- In a mixing bowl, add your Greek yogurt and eggs. Whisk together. Then add the flour, baking powder and protein powder. Whisk together. Last, add the zucchini, maple syrup and cinnamon. Stir until the perfect muffin batter is made.
- Add to your muffin pan. Place pan in the oven and bake for 18-20 minutes. Enjoy!
Notes
You can try this out with gluten free all purpose flour as long as it’s a 1:1 ratio flour. You can add additional items like walnuts or chocolate chips to this muffin!
