Homemade Reese’s Peanut Butter Trees (High-Protein) (Edit recipe)

Here’s my healthier copycat version of a popular Christmas treat- Reese’s chocolate peanut butter trees! Mine are made with only six simple ingredients and are vegan, gluten free, refined sugar free, high protein, and easy to make. They taste almost exactly like the original, if not better! Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Combine peanut butter, protein powder, maple syrup, and salt. Mix well until a thick dough forms, using your hands if needed.
  2. Use your hands to flatten dough into a large rectangle. Use a Christmas tree shaped cookie cutter to shape into about five Christmas trees. If you don't have a cookie cutter, then do your best to shape them with your hands. Put in the freezer for about 20 minutes to firm up.
  3. Melt chocolate chips with coconut oil. Coat the peanut butter trees in melted chocolate, letting any excess chocolate drip off. Place onto a wire rack or parchment lined tray. Optionally top with Christmas sprinkles- I used sprinkles that resemble Christmas tree ornaments.
  4. Put in the freezer for another 15-20 minutes or until chocolate has hardened. Enjoy! Best stored in the fridge for up to 1 week.
