Chai Spiced Sweet Potato Smoothie
This thick and creamy Chai Spiced Sweet Potato Smoothie combines sweet potatoes with coconut milk, almond butter, and cozy fall spices, plus a boost of protein. It tastes like sweet potato pie in a glass!
Ingredients
- 1 cup1 cup1 cup Coconut Milk, I used light coconut milk (any non-dairy milk will work)
- 0.5 cup0.5 cup0.5 cup Sweet Potato, baked (*see notes)
- 111 Banana, ripe, peeled, broken into chunks, and frozen
- 0.25 cup0.25 cup0.25 cup Ice Cubes
- 2 Tbsp2 Tbsp2 Tbsp Vanilla Protein Powder, optional
- 1 Tbsp1 Tbsp1 Tbsp Almond Butter, or other nut or seed butter; peanut butter not recommended, as the flavor may be overpowering
- 111 Medjool Dates, pitted (if you're not adding protein powder, use 2 dates for extra sweetness)
- 0.5 tsp0.5 tsp0.5 tsp Vanilla Extract
- 1 tsp1 tsp1 tsp Ground Cinnamon
- 0.5 tsp0.5 tsp0.5 tsp ground Ginger
- 0.25 tsp0.25 tsp0.25 tsp ground Nutmeg
- 0.25 tsp0.25 tsp0.25 tsp Ground Cardamom
- 0.125 tsp0.125 tsp0.125 tsp ground Cloves, start with a pinch if you don't want a strong flavor
- 1 pinch1 pinch1 pinch Sea Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add all ingredients to a high powered blender and blend until completely smooth.
- Pour into a glass and add toppings if desired, such as whipped cream, granola, pumpkin seeds, and/or a sprinkle of cinnamon. Enjoy!
Notes
If you have a leftover baked sweet potato on hand, remove the skin and pack it into the measuring cup. You can also use roasted sweet potato chunks, as long as they’re plain with no seasonings besides salt or cinnamon. If you don’t have a cooked one on hand, then you can make a quick ‘baked’ sweet potato in the microwave! Simply wash, rinse, and dry a sweet potato and poke holes in several places with a fork. Place on a paper towel. Cook in the microwave on high for 3 minutes, then flip and cook for 2 more minutes, or until fork tender. Let cool before adding to the smoothie.
