There is seriously nothing that makes me crave summer more like a crisp, refreshing salad. This salad has a combination of creamy goat cheese with cosmic crisp apples and a homemade honey mustard. This salad will not disappoint! Substitute with your favorite greens and veggies and add salmon, steak, or grilled chicken to complete this meal.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. 1. In a mason jar or large bowl, add oil, vinegar, mustard, and honey. If using a mason jar, seal lid tightly and shake vigorously until ingredients are thoroughly combined.
  2. 2. Season with salt to taste.
  3. 3. In a large serving bowl add arugula, sprouts, cucumbers, carrots, apples, and goat cheese. Lightly drizzle some of the honey mustard vinaigrette over the salad and add fresh cracked black pepper.
  4. 4. Lightly toss the salad and serve immediately.
  5. Provecho amigos!

Notes

I served mine with a medium rare New York strip steak, add any of your favorite proteins!
