Crispy Chicken Caesar Salad
My favorite girl dinner of all time: a Caesar salad topped with crispy chicken cutlets. It’s the ELITE combo—crunchy, creamy, salty perfection—especially when paired with a crispy sparkling beverage. Simple, satisfying, and always hits the spot. Provecho amigos!
Ingredients
Chicken Cutlets
- 2 whole2 whole2 whole Chicken Breasts, Boneless Skinless, sliced in half lengthwise to make 4 thin cutlets, brined (see note below)
- 0.5 cup0.5 cup0.5 cup Gluten-Free Flour, or all-purpose
- 1 whole1 whole1 whole Egg, beaten
- 1 cup1 cup1 cup Gluten-Free Italian Bread Crumbs, or regular breadcrumbs
- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Real Salt - Redmond
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Black Pepper, freshly cracked
- 0.333 cup0.333 cup0.333 cup Parmesan Cheese, freshly grated
- 1 tsp1 tsp1 tsp Organic Garden Ranch Seasoning Mix - Primal Palate
- .5 - 1 cup.5 - 1 cup.5 - 1 cup Avocado Oil
Salad
- 1 whole1 whole1 whole Lettuce, Romaine, chopped finely
- 0.25 cup0.25 cup0.25 cup Parmesan Cheese, freshly grated
- 0.25 cup0.25 cup0.25 cup Easy Homemade Croutons (click for recipe), slightly crumbled
- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Black Pepper, freshly cracked
- 1 whole1 whole1 whole Lemon, sliced
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Homemade Caesar Dressing (click for recipe)
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Season the cutlets with salt and pepper.
- Set up a dredging station with three shallow bowls: In the first, combine flour with a pinch of salt, pepper, and ranch seasoning.
- In the second, beat the egg.
- In the third, mix the breadcrumbs with grated Parmesan.
- Dredge each cutlet in the flour mixture, then dip into the egg, and finally coat in the breadcrumb mixture, pressing gently to help it stick.
- Heat a thin layer of oil in a skillet over medium heat.
- Fry the cutlets for 3–4 minutes per side, or until golden brown and cooked through.
- Transfer to a paper towel-lined plate or wire rack to drain. Slice just before serving.
- To assemble the salad, toss chopped romaine with Caesar dressing until well coated.
- Top with sliced chicken, Parmesan, and croutons.
- Finish with cracked black pepper and an extra sprinkle of cheese. Serve with fresh lemon wedges. Provecho amigos!
