Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Season the cutlets with salt and pepper.
  2. Set up a dredging station with three shallow bowls: In the first, combine flour with a pinch of salt, pepper, and ranch seasoning.
  3. In the second, beat the egg.
  4. In the third, mix the breadcrumbs with grated Parmesan.
  5. Dredge each cutlet in the flour mixture, then dip into the egg, and finally coat in the breadcrumb mixture, pressing gently to help it stick.
  6. Heat a thin layer of oil in a skillet over medium heat.
  7. Fry the cutlets for 3–4 minutes per side, or until golden brown and cooked through.
  8. Transfer to a paper towel-lined plate or wire rack to drain. Slice just before serving.
  9. To assemble the salad, toss chopped romaine with Caesar dressing until well coated.
  10. Top with sliced chicken, Parmesan, and croutons.
  11. Finish with cracked black pepper and an extra sprinkle of cheese. Serve with fresh lemon wedges. Provecho amigos!
