In-N-Out Inspired Pasta Salad (Edit recipe)

Growing up in CA, In-N-Out was a staple. Every Friday night during High School football season - I went to get burgers & animal style fries with the team win or lose. Fast forward to today- I live five and half hours from the closest In-N-Out so I’ve made due by learning how to make their famous spread and variations of their timeless burgers. This recipe mixes my love of pasta salad with the flavors from my favorite burger joint. I used U.S. Wellness Meats grass fed 85% lean ground beef that is super flavorful & browns perfectly. Provecho amigos!  P.S. Scroll through the pics for a surprise!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Combine all spread ingredients in a bowl and set in fridge to chill for at least 20 minutes.
  2. Finely chop white onion and add to a hot skillet. I add a dash of avocado oil and sprinkle salt.
  3. Set heat to medium-low. Ensure onions don’t burn and remove from heat once caramelized (takes about 10 minutes).
  4. In the same pan add ground beef, sprinkle of salt and mustard. Using a wooden spoon crumble ground beef and brown meat. Remove from heat once fully cooked.
  5. Once meat and onions have chilled for about 10 minutes- add all salad ingredients to a large bowl.
  6. Toss lightly with spread and serve immediately.

Notes

Few notes-

  • Just like going to In-N-Out- if you don't like one of the ingredient (feel free to sub it out)
  • I don't use the entire batch of spread - I drizzle, toss, and adjust so that it's not overly wet. The spread will stay good in fridge for 10 days.
  • I'm not a huge fan of tomatoes- feel free to add more to your liking
