Italian Sausage & Pepper Skewers
I consider this the summer version of sausage and peppers. Lightly seasoned peppers and onions combined with sweet (or hot) Italian sausage are grilled until the peppers are tender and the sausage is cooked through. Easy to prep ahead and grill when you are ready. Serve it along side some buttered rice or a a nice salad.
Ingredients
- 2 whole2 whole2 whole Red Bell Pepper, Cut into large chunks
- 2 whole2 whole2 whole Green Bell Pepper, Cut into large chunks
- 1 whole1 whole1 whole Red Onion, medium size cut into large chunks
- 0.5 - 1 lb0.5 - 1 lb0.5 - 1 lb Italian Sausage, Mild, can sub in hot Italian Sausage

- 3 - 4 Tbsp3 - 4 Tbsp3 - 4 Tbsp Extra Virgin Olive Oil
- 1 tsp1 tsp1 tsp Salt

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

- 1 tsp1 tsp1 tsp Garlic Powder

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- If using wooden skewers soak them in water for 30 minutes while prepping the peppers and onions.
- Core and cut the red and green bell peppers into large chunks then place them into a large bowl.
- Peel and cut the red onion into large chunks, separating the layers and place them into the bowl with the peppers.
- Drizzle 3-4 tbs of extra virgin olive oil onto the peppers.
- Add 1 tsp of salt, 1/2 tsp of black pepper, 1 tsp of garlic powder to the peppers and onions and mix until they are all liberally coated in the oil and spice mixture. If the peppers seem a bit dry add a bit more olive oil.
- Cut the sausage links into large pieces ( a bit larger than bite size).
- Once the skewers have soaked, start by layering the peppers and onions onto the skewer, then add the Italian sausage. Ideally you want two pieces of sausage on the skewer and more veggies.
- Pre-heat the grill to medium heat.
- Grill the sausage and pepper skewers rotating every so often so they don't burn approximately 25 minutes. Peppers should be tender and slightly charred and sausage should be cooked to 160°F.
Notes
You may have more veggies than sausage, simply make veggie skewers to use them up. If you find the peppers are not softening on the grill simply brush them with a bit more olive oil. Makes approximately 10 skewers.
