Italian White Bean Salad
A fresh and flavorful Italian White Bean Salad made with creamy white beans, juicy cherry tomatoes, red onions, and fresh parsley, all tossed in a zesty mustard vinaigrette. Perfect as a light meal, side dish, or potluck favorite!
Ingredients
Marinade
- 1 cup1 cup1 cup Extra Virgin Olive Oil
- 333 Red Wine Vinegar
- .75 tsp.75 tsp.75 tsp Sea Salt
- .5 tsp.5 tsp.5 tsp Dijon Mustard
- .5 tsp.5 tsp.5 tsp Black Pepper
Salad
- .75 cup.75 cup.75 cup Red Onion, thinly sliced
- 1.5 tsp1.5 tsp1.5 tsp Garlic, minced
- 2 pint2 pint2 pint Tomato, Cherry, halved
- 15 oz15 oz15 oz White Beans, can of (drained and, rinsed
- .333 cup.333 cup.333 cup Parsley, fresh chopped
- .5 cup.5 cup.5 cup Parmesan Cheese, (shaved (about 2 oz))
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
Marinade
- In a small bowl, whisk together the olive oil, vinegar, salt, mustard, and pepper.
- Stir in the red onions and garlic. Set aside to marinate for 15-30 minutes.
Salad
- In a large bowl, place the tomatoes, beans, and parsley. Combine.
- Pour the dressing over the salad, toss well.
- Gently fold in the Parmesan cheese.
- Serve at room temperature.
Notes
Serve with a slotted spoon so the dressing doesn't get all over your plate. Store in an airtight container in the refrigerator for up to 4 days. This salad is terrific as a full lunch or dinner with an added protein like canned tuna or rotisserie chicken.
