  1. Rinse the chickpeas in a colander until the water runs clean. Using a paper towel, dry the chickpeas completely.
  2. In a small bowl, add the olive oil, thyme, rosemary, and garlic powder. Whisk to combine.
  3. In a larger bowl, add the chickpeas.
  4. Pour the dressing over the chickpeas and combine.
  5. To bake the chickpeas

    1. Preheat the oven to 425u2109. Prepare the baking sheet by lining it with parchment paper.
    2. Spread the chickpeas out on the pan in a single layer.
    3. Sprinkle the top of the chickpeas with salt.
    4. Bake in the preheated oven for 30-35 minutes, tossing the chickpeas halfway through.

    To air fry the chickpeas

    1. Preheat the air fryer to 400u2109.
    2. Spread the chickpeas out in a single layer in the basket of the air fryer.
    3. Air fry for 12-15 minutes, tossing them halfway through.

Notes

They can be stored in a container for about 4 days at room temperature. While storing, crack the top of the container open slightly so that the air can help the chickpeas stay crisp. Freezing - You can freeze these chickpeas. Allow them to cool completely. Place them in a freezer safe container. They will last for about a month. Thaw at room temperature. Don't overcrowd the pan - Spread the chickpeas in a single layer with some space between them. Overcrowding leads to steaming, not roasting.
