Lavender Simple Syrup (Edit recipe)

Lavender lattes are my favorite, and I love to order them at coffee shops. I was recently gifted some dried lavender and couldn't resist trying my hand at lavender simple syrup! It's so delicious and floral without tasting like soap, and it melts beautifully into homemade lattes. No need to spend $$$ at coffee shops anymore when you can make it from home at a fraction of the cost!!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add water to a small pot, then carefully pour in sugar and add pinch of salt.
  2. Allow to come to a boil on medium/high heat, stirring occasionally to make sure sugar fully dissolves in water and doesn't stick to the bottom of the pot.
  3. Once it reaches a bowl, remove from heat and stir in vanilla and dried lavender.
  4. Allow to cool completely (about an hour or so), then strain with cheese cloth or nut milk bag (you can use a fine mesh sieve but you might still have some bits of lavender floating around if you do).
  5. Pour into a glass container with an airtight lid and store in the refrigerator for 1-2 weeks.
  6. Add to coffee, mocktails, cocktails, or however else you'd use simple syrup!
