Lemon blueberry french toast
Made with thick slices of brioche bread, this French toast adds a smile on your face. It's topped with juicy blueberries which adds a balance of sweet, tangy and buttery goodness, ideal for brunch or breakfast.
Ingredients
For blueberry syrup
- 1 pint1 pint1 pint Blueberries
- 1 cup1 cup1 cup Pure Maple Syrup
- 222 Lemon
For French toast
- 14 oz14 oz14 oz Brioche Bread, loaf
- 222 Eggs
- 0.5 cup0.5 cup0.5 cup Whole Milk
- 0.5 cup0.5 cup0.5 cup Heavy Whipping Cream
- 0.5 tsp0.5 tsp0.5 tsp Cinnamon, Ground
- 1 tsp1 tsp1 tsp Vanilla Extract
- 3 Tbsp3 Tbsp3 Tbsp Butter, Unsalted
- 3 Tbsp3 Tbsp3 Tbsp Vegetable Oil
- 0.25 cup0.25 cup0.25 cup Powdered Sugar
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
For blueberry syrup
- In a saucepan, add the blueberries, maple syrup and zest & juice of one lemon. Let simmer on medium heat for about 7 minutes or until the berries change into a bright color and start to soften slightly. When it is ready, turn off the heat and set aside. The consistency should be chunky with some liquid, it will thicken as it cools.
For French toast
- In a large bowl, crack the eggs and add the milk, cinnamon, vanilla, and the zest of one lemon. Use a whisk to combine well. Using a bread knife, cut the loaf into thick slices (your desired amount per serving), about 1 inch thick.
- Heat a cast iron pan or frying pan over low heat, add equal parts of oil and butter to the pan.
- Dip one slice of bread in the egg mixture ensuring each side is evenly coated. Place the slice in the pan and let cook for about 3 minutes on each side or until golden brown with nice crispy edges. Repeat with the other bread slices.
- When all the bread slices are cooked, arrange on a large plate and dust with confectioner’s sugar. Spoon your desired amount of blueberry syrup onto the bread slices. Serve and enjoy.
