Lobster Quesadilla
Give me a quesadilla and I’m all in. Melty, cheesy, crispy, what’s not to love? But toss in some lobster? Now we’re showing off.
This lobster quesadilla is buttery, loaded with tender chunks of lobster, and finished with a little kick of spice for balance. Serve it as an appetizer or slice it up as the main event. Either way, everyone’s hovering the second it hits the table.
Ingredients
- 1 cup1 cup1 cup Lobster, cooked, chopped
- 3 Tbsp3 Tbsp3 Tbsp Butter, Salted, divided

- 0.5 cup0.5 cup0.5 cup Red Bell Pepper, diced
- 0.5 cup0.5 cup0.5 cup Red Onion, diced
- 0.25 cup0.25 cup0.25 cup Corn, kernels
- 3 Tbsp3 Tbsp3 Tbsp Green Onion (Scallion), diced

- 3 Tbsp3 Tbsp3 Tbsp Cilantro, chopped
- 1 tsp1 tsp1 tsp Cumin, Ground

- 1 tsp1 tsp1 tsp Chili Powder
- 0.5 tsp0.5 tsp0.5 tsp Kosher Salt

- 2 Tbsp2 Tbsp2 Tbsp Sour Cream
- 3 cups3 cups3 cups White Cheddar Cheese, shredded

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large nonstick skillet, melt 1 tablespoon of butter over medium heat. Add the chopped lobster meat and cook for 1–2 minutes until warmed through.
- Add chopped red bell pepper, red onion, corn, scallions, cilantro, cumin, chili powder, and salt to the pan. Sauté for 1 minute to soften the vegetables slightly.
- Remove from the heat and fold in the sour cream and 1 cup of the shredded cheese.
- Scoop the mixture onto one half of each tortilla, leaving a little room at the edges. Sprinkle a little extra cheese on top, then fold over to make a half-moon.
- Wipe out the skillet if needed, then melt a tablespoon of butter over medium heat. Gently place folded quesadillas in the pan, (2 at a time if they fit).
- Cook for 3–4 minutes until golden brown on the bottom. Carefully flip and cook the other side, adding more butter if needed.
- Remove from the pan, let cool slightly, then slice into wedges and serve warm.
Notes
Each tortilla can be sliced into 3 large triangles, or cut into 6 smaller bite-sized wedges—perfect for appetizers. A pizza wheel makes slicing super easy.
