Low Carb Keto Breakfast Bread: Banitsa
This Bulgarian dish is typically made with phyllo pastry and filled with cheese and eggs, but my version is low-carb and keto-friendly. Keto banitsa is perfect for breakfast, brunch, or as a snack any time of the day.

- 3 tsp3 tsp3 tsp Psyllium Husk, Whole

- .5 tsp.5 tsp.5 tsp Baking Powder

- 3.5 oz3.5 oz3.5 oz Feta Cheese
- 1.75 oz1.75 oz1.75 oz Cheddar Cheese

- To prepare the keto Banitsa, start by preheating your oven to 430°F (220°C). Then, combine all the ingredients, as listed in the recipe card, in a mixing bowl. Stir thoroughly until the mixture is uniform and smooth.
- Allow the keto dough to rest for 10 to 15 minutes at room temperature. If the room is cool, consider adding additional resting time. The dough will thicken slightly and will resemble traditional dough more closely.
- Next, line a baking sheet with parchment paper and spread the dough into a thin, even layer. Bake the keto bread for 12-15 minutes, or until it’s golden brown and slightly crispy around the edges.
- Let it cool for a few minutes before slicing and serving. Enjoy it warm or cold, as you prefer.

Cold savory keto snack on the go or in the office: Place it in a container or wrap it in foil and take it with you to work. Fancy a quick keto dessert? Why not sprinkle a little bit of a keto friendly sweetener (ideally powdered)? My mother adds a little bit of lemonade in the traditional banitsa recipe and it tastes sweet and savory and it’s so satisfying. That’s how I came up with the idea of sprinkling a bit of sweetener on top of the keto banitsa or sipping lemonade while enjoying this low carb snack.
